Meet three optimists opening new restaurants in Ireland this year despite the downturn

‘Why try to open now, in 2022?” Ciarán McGonagle repeats the question to himself in his Donegal lilt, ruminating on an answer, before declaring, “I want to open my own Roman pizza place in Dublin, and there will never be a ‘right time’. Opening a restaurant is like having a baby – there’s no such thing as the right time.”

McGonagle – a familiar face on the Dublin events scene as one half of the pair behind Catch Events (yes, those lockdown Quarantini kits) and the sweet street food truck Ciao Cannoli – has been vying to open Mani, his Roman pizza bar concept, in the capital for the past two years.

His route to market has continued to stutter and stall, contending with lease
